Ingredients:

- 500 grams of pork belly, thinly sliced

- Kimchi (fermented spicy cabbage)

- Pickled radishes (danmuji) or other pickled vegetables (optional)

Instructions:

1. Prepare the pork belly: Rinse the pork belly slices under cold water and pat them dry with a paper towel. Season the pork belly lightly with salt.

2. Heat the grill: If you have a Korean-style tabletop grill, heat it up. If you don't have one, you can use a regular grill pan or a non-stick skillet on the stove over medium-high heat.

3. Grill the pork belly: Place the pork belly slices on the hot grill and cook them for about 2-3 minutes on each side until they are nicely browned and crispy. Make sure not to overcook them to maintain their tenderness.

4. Prepare the accompaniments: While the pork is grilling, wash and separate the lettuce leaves. Set them aside. Arrange the ssamjang (dipping sauce), kimchi, pickled radishes, garlic cloves, sesame oil, and any other desired accompaniments on the table.

5. Slice the grilled pork belly: Once the pork belly slices are cooked, remove them from the grill and slice them into bite-sized pieces using kitchen scissors or a knife.

6. Assemble and eat: Take a lettuce leaf and place a piece of grilled pork belly on top. Add a small amount of ssamjang, kimchi, and any other desired accompaniments. You can also add a garlic clove, dip it in sesame oil, and wrap it in the lettuce leaf for extra flavor. Fold the lettuce leaf to create a small bundle (ssam) and enjoy it in one bite.

7. Repeat the process: Continue grilling the remaining pork belly slices and assembling the ssam until you have eaten to your heart's content.
