Ingredients:

- 300 grams of red rice cakes (Garaetteok)

- 200 grams of fish cakes, sliced into bite-sized pieces

- 1 cup of cabbage, thinly sliced

- 1 onion, thinly sliced

- 2 cloves of garlic, minced

- 2 tablespoons of gochujang (Korean red chili paste)

- 1 tablespoon of gochugaru (Korean red chili flakes)

- 1 tablespoon of soy sauce

- 1 tablespoon of sugar

- 1 tablespoon of vegetable oil

- 4 cups of anchovy or vegetable broth

- 1 green onion, chopped (for garnish)

- Sesame seeds (for garnish)


Instructions:

1. Soak the red rice cakes in cold water for about 30 minutes to soften them. Drain and set aside.

2. Heat a large pan or a wok over medium heat and add the vegetable oil.

3. Add the minced garlic to the pan and sauté for a minute until fragrant.

4. Add the sliced onion and cabbage to the pan and stir-fry until they become slightly softened.

5. In a small bowl, mix together the gochujang, gochugaru, soy sauce, and sugar to make the spicy sauce.

6. Add the spicy sauce to the pan and stir-fry with the vegetables for a minute to coat everything evenly.

9. Reduce the heat to medium-low and let the mixture simmer for about 10-15 minutes, stirring occasionally, until the rice cakes are cooked and the sauce has thickened slightly.

10. Taste the tteokbokki and adjust the seasoning if needed by adding more gochujang, gochugaru, soy sauce, or sugar according to your preference.

11. Once the rice cakes are tender and the sauce has thickened to your liking, remove the pan from the heat.

12. Transfer the tteokbokki to a serving plate and garnish with chopped green onions and sesame seeds.
